3 Ways to Eat Freeze Dried Liver:
Why do I even need to eat liver?
Incorporating freeze dried liver into your diet can be a beneficial addition to your overall health and well-being. Liver, especially from pasture-raised and grass-fed animals, is an exceptionally nutrient-dense food. It is a rich source of essential vitamins and minerals, including iron, vitamin A, B vitamins (such as B12 and folate), and zinc. These nutrients play vital roles in various bodily functions, supporting everything from the immune system and metabolism to blood health and brain function.
One of the standout nutrients in freeze dried liver is iron, a crucial component of red blood cells that carries oxygen throughout the body. Iron deficiency can lead to fatigue and anemia, making liver an excellent food choice, particularly for those with iron-deficiency anemia or at risk of developing it.
Moreover, freeze dried liver is a fantastic source of preformed vitamin A, also known as retinol. Vitamin A is essential for maintaining healthy vision, supporting the immune system, and promoting healthy skin and mucous membranes. Consuming liver can help meet your body’s vitamin A needs, especially for individuals who may not efficiently convert carotenoids (found in plant-based foods) into active vitamin A.
Additionally, freeze dried liver is abundant in B vitamins, including vitamin B12 and folate, both of which are vital for neurological health, DNA synthesis, and red blood cell production. These B vitamins are especially critical during pregnancy to support fetal development.
While some may find the taste of freeze dried liver strong, incorporating it into your diet in moderation can offer a wealth of nutritional benefits. Consider adding small portions to stews, pâtés, or even blending it into meatloaf or burgers for a boost of essential nutrients. Remember that moderation is key, as liver is also high in cholesterol, so balance it with a variety of other nutritious foods in your diet.
Overall, consuming freeze dried liver can be a valuable addition to a balanced and diverse diet, helping to ensure that you obtain essential nutrients necessary for optimal health and vitality. Whether you are exploring new culinary adventures or seeking ways to boost your nutrient intake, including liver in your diet offers a host of reasons to savor its nutritional benefits.

The SECRET to cooking the liver before freeze drying...
Now you have the 3 ways to eat liver that aren’t gross. But now you want to know how to cook the liver and it NOT stink? We use the Sous Vide! It’s the perfect solution to cooking your liver and not smell it at all.
Sous vide cooking has revolutionized the way we prepare food, and liver is no exception. By using this precise and gentle cooking method, you can achieve perfectly cooked liver that is tender, flavorful, and retains its nutritional value.
Here’s a step-by-step guide on how to sous vide liver to perfection.
Start by choosing high-quality, fresh liver from pasture-raised and grass-fed animals for the best flavor and nutrient content. Before cooking, rinse the liver under cold water and pat it dry with paper towels.
Next, season the liver with your favorite herbs and spices. A simple mix of salt, pepper, and garlic powder complements the liver’s natural flavor beautifully. You can also experiment with other seasonings like thyme, rosemary, or paprika to create a unique taste profile. You can leave it plain, too!
Place the seasoned liver in a vacuum-sealed bag, making sure it lies flat and in a single layer to ensure even cooking. Seal the bag using a vacuum sealer or the water displacement method to remove any air and create a tight seal.
Preheat your sous vide water bath to the desired temperature. Liver is best cooked at medium-rare to medium doneness, around 140°F to 150°F (60°C to 65°C). Cooking at this temperature range preserves the liver’s tenderness while preventing it from becoming tough and overcooked.
Once the water bath reaches the desired temperature, carefully submerge the sealed bag of liver into the water, ensuring it is fully immersed. Cook the liver for approximately 1 to 2 hours, depending on its thickness. This cooking time allows the liver to cook evenly and reach the desired doneness while maintaining its juiciness and flavor.
After the cooking time is up, remove the bag from the water bath and gently pat the liver dry with paper towels. (This is the only time you’ll smell it during this process!)
Lay your cooked liver on your freeze dry trays, freeze dry with your Harvest Right machine, and powder in your Vitamix! Add to a jar, leave in your pantry, and have it ready whenever you need it!
